Meatballs-in-Mass

If you like meatballs, make them by the zillions! Meatballs work as an appetizer, as a main course.  They just work! Turkey meatballs, beef meatballs, veggie meatballs, they are all so practical and delicious! When I make meatballs I always at least double the recipe.  I use an ice cream scoop and lay them out on parchment paper. Sometimes I bake them ahead and freeze them. More often than not I mix them up, portion them out, and freeze them on a tray covered with plastic wrap.  Once frozen I put them all in a big zipper bag and keep in the freezer. When needed, I pop them in the oven and bake just the number I need. Freezing them uncooked seems to result in a meatball that is more moist then when frozen precooked.  Meatballs though very simple, are impressive!  Guests think you went to alot of trouble making meatballs.  Not so much when you just take them out of the freezer, pop them in the oven and you are good to go!
