Cocoa in Your Chili?

Chili is a favorite soup for countless people.  I think  there are as many varities of chili as there are people who like it.  A delicious secret to any tomato-based chili is baking cocoa.  Yes.  You did read that correctly: baking cocoa.  I discovered this totally by accident but cocoa in my chile is now a ‘must’.  Chili without it tastes very different, and not in a good way. Cocoa in chili also takes the place of a great deal of salt that normally goes into the soup. Once your chili is gently simmering away on the stove or in your crock pot, all your delicious ingredients and flavorful spices have been added, stir in a tablespoon of baking cocoa.  I use a heaping tablespoon of baking cocoa for every 4 quarts of chili.  Your chili will develop a deeper color, and a richer consistency.  The chocolate flavor itself isn’t noticeable in the chili, but yet it does provide a distinct flavor element.  Chili with a bit of cocoa has a richer, more enhanced flavor.  People have commented on my chili and can’t quite recognize the source of the wonderful flavor.  Cocoa.  Who would have thought?

    I often put a small square unsweetened baking chocolate in my chili for that rich dark color and unique flavor. I’ll be trying the cocoa next time.
