Fresh salsa is so good! Now that tomatoes are in season, you can make your own salsa with fresh tomatoes. Your salsa will taste so very fresh and it will be delicious! 5 cups unpeeled, diced, tomatoes. You will start with 6 cups, salt, strain for an hour, ending with about 5 cups.
1/2 each yellow or orange, and green, bell pepper. Diced.
4 green onions, diced, tops and all
3 tablespoons finely diced celery ( always put a bit of celery in my salsa. It keeps its crunch in the salsa.
3 tablespoons dried parsley or cilantro. If you have access to fresh, use 6 tablespoons of chopped
fresh, cilantro or parsley.
1/8 cup lime juice
2 tablespoons rice vinegar
3/4 teaspoon salt
1 1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1 teaspoon red pepper flakes. Adjust to the ‘heat’ level you want.
In large bowl place drained tomatoes and all ingredients. Mix well, chill, and enjoy your thick salsa with your favorite chip! This keeps welling the refrigerator for several days, if it lasts that long!
