Sweet Potato Salad – Uniquely Different!

 

IMG_1407This salad is just a bit unique! It uses sweet potatoes rather than white potatoes and has no mayonnaise. Sounds healthy already! Refreshing and a bit savory, it is really great made a day ahead but just as good if made early in the day and allowed to thoroughly chill before serving.

 

2 lbs sweet potatoes

¼ cup fat-free Greek yogurt

1 scallion, diced

1 tbls. minced chives

3 tbls olive oil

3 tbls apple cider vinegar

2 tbls prepared basil pesto

½ tsp celery seeds

¼ teaspoon hot sauce

½ tsp freshly cracked black pepper

2 tsp orange zest

 

Peel potatoes and cut into large-size chunks. Cook in salted water until you each desired level of ‘doneness’, or about 8 minutes. Drain and place in cold water to stop cooking.

In large bowl whisk the remaining ingredients. Add potatoes and stir gently. Cover tightly and chill

 

Optional: Garnish with real or artificial bacon bits.
