Summer Carrot Salad

Summer Carrot Salad is a nice change from your usual mayonaise salads.  Low carb as there is no macaroni in it and low fat since you won’t find any mayo here! Not only great tasting, but bright and festive looking as well.  Try it!

2 lbs.  peeled & sliced
1 medium onion, sliced in thin half rings
1/2 cup fresh corn or peas.  

Bring 6 qts. water to a boil.  Cook 3-4 minutes.  Remove from the water and place in cold water.  In the same pan of water used for the carrots, immerse onion slices and cook one minute.  Remove to bowl with carrots.  Add pea pods or fresh corn kernals to same cooking water and cook 1 minute. Remove and place in cold water.   Drain well when cool and add to carrots and onions.

 

In a large bowl whisk the following:
1 can tomato soup
1/4 C apple cider vinegar
1/2 C honey or agave syrup
2 tsp. prepared mustard
1 tsp. worcestershire sauce
1/2 tsp salt
1/2 tsp pepper
2 tsp. lemon zest
Pour over carrot mix, cover, and chill thoroughly.
