Soup With Stuffing Dumplings

soupDo you love stuffing and love soup? Here is the perfect combo! I think my daughter may have planted this idea in my mind last year, but it recently surfaced when looking at my holiday leftovers. The soup is basic but delicious and easy to make anytime. You can, of course, add these stuffing dumplings to any soup you like,  use my recipe or make  your own favorite soup. Rather than use noodles or rice I make a dumpling from the stuffing and add it to the soup right before serving. Delicious! If you don’t have leftover stuffing or don’t want to make your own, visit the deli in your local grocery store. My local deli  always has stuffing available. Stuffing does not freeze well so always make your stuffing dumplings fresh. If the stuffing dumplings are hot they will sizzle nicely when dropped into your soup. Hmm, this is so good!

 

Soup

IMG_30626 cups chicken or vegetable stock

1-cup low-fat milk

1-cup water

1 medium onion, chopped

1-cup celery, chopped

1 cup sliced carrots

1 medium potato, diced

1 cup sliced mushrooms

2 tablespoons olive oil

2 teaspoons poultry seasoning

1 teaspoon each ground thyme and marjoram

*1 – 1 ½ cup cooked chicken – optional

Heat the olive oil until just hot and add the onions.  Sauté until soft and slightly golden. Stir in the mushrooms and cook three minutes.  Add the remaining vegetables and chicken if using, and stir. Slowly add the liquids and spices and cover on medium heat until vegetables are tender.

 

Stuffing Dumplings

1/4 cup seasoned breadcrumbs

Mix the stuffing and crumbs together. The mixture should be quite moist.  You may add a tablespoon of milk, one at a time, if too dry.  Using a cookie or small ice cream scoop shape your dumplings from the stuffing mix.  Be sure to pack the scoop solid with stuffing.  Place the stuffing dumplings on a parchment lined baking sheet and spritz with baking spray to help brown. Bake in a 350˚ oven for 10 – 12  minutes. The dumplings should be crispy on the outside.

 

Serving

To each serving of warm soup add 3 or 4 stuffing dumplings. Be careful as the dumplings may sizzle a bit if they are hot when added to the soup. If your soup is hot, a room temperature dumpling will help cool the soup. Garnish with a drizzle of sour cream or half & half.
