Chilled Fruit Soup

This is a unique soup served cold or warm.  Chilled Fruit Soup makes a nice starter for a meal, as well as a healthy, refreshing snack.  In cold weather when oatmeal is your breakfast of choice Chilled Fruit Soup is great stirred in.  Nice served on french toast as well.
1/2 lb pitted prunes
1 cup rasins
1 lb. mixed, dried fruit
1/2 cup dried cranberries
4 tablespoons tapioca
l large lemon, seeded and sliced
3/4 cup sugar, or equivalent amount of agave syrup.  If using a liquid syrup such as agave, reduce
amount of water accordingly.
1 stick cinnamon
4 cups water

Cover dried fruits with water. Simmer gently 30 minutes.  Stir frequently, and add more water if consistency  is not that of a thick soup.

Bring to a soft boil, stirring constantly.  Remove from heat.  Add lemon, sugar and cinnamon, and tapioca.  Cover and rest 30 minutes.  Chill and serve.

Once the soup is chilled stir in fresh seasonal fruits you have on hand when ready to serve. Sliced peaches are very good as an addition.  Strawberries and raspberries work great! Fruit soup freezes well.  Nice alternative to your typical popsicle while getting your kids to eat more fruit.
