When we crave red meat, we do give in to our cravings once in a great while. This is especially true during the summer when we want a burger on the grill. We use ground bison for many reasons. We choose organic bison as it is fed just grass as the animal was intended to eat. No antibiotics, no hormones, no corn or other fillers. Just grass. Why bison? About 4 1/2 ounces of ground bison has 2.42 grams of fat, as opposed to about 4 1/2 ounces of choice beef which has 10.15 grams of fat. Bison is higher in iron and B12 than beef and is also lower in cholesterol. Bison fits the dietary guidlines of the American Heart Association. Bison can be used just like beef, and comes in many different cuts. We weigh out a four-ounce portion of ground bison for each of us. Grilling it helps lessen the fat content as much of the fat, if not most, drips off as it is grilling. We have always had to purchase frozen bison burgers. Now we discovered a local market carries it fresh ground. A happy discovery! If you cannot locate bison at your market, it can be ordered from several on-line sites. Try it, you may be pleasently surpirsed at the flavor, and feel good that you are consciously making what I see as a more healthy choice!
