Have you ever been in the spot where you need a ‘homemade’ dessert and have none? Friends are coming and there is no way to dress up an Oreo so it doesn’t look like an Oreo. Or maybe you feel like you deserve a dessert, just for you! Give Quick Crumble a try. This is such an easy dessert for any occasion. It is works so well when you want to use up leftover fruit but you don’t have enough for a pie. Any fruit will do, fresh or canned. My favorite is leftover cranberry sauce. Oh, but a cut up fresh peach is so good too, and so is chunky applesauce. Oh well, okay I like them all. The secret is your baking dish. For each serving you need a 4-inch ramekin. I have six I keep on hand and use them for a multitude of things. Any small, individual baking dish will work. Individual desserts will impress anyone at your table. Kids love them too. Try the crumble, and get ready to have fun trying new fillings! This is a great recipe because it works for one serving or a zillion, and is just as easy for either!
For each 4-inch ramekin you will need:
Butter for baking dishes
½ cup fruit filling. Use fresh or well-drained canned fruit.
2 tablespoons brown sugar
1/3 cup oats – not instant or quick type
1 tablespoon cold butter
*A bit of cinnamon or chopped nuts are a nice addition too!
Preheat oven to 400 degrees. Lightly butter each baking dish. Place fruit in each dish. Be sure canned fruit is very well drained. In small mixing bowl crumble the tablespoon of cold butter. With a fork work in the oats and brown sugar. Sprinkle the crumble directly on the fruit. Do not pat down. Bake for 10 – 12 minutes. Serve warm with cream, ice cream, or both!
