Boxed baking mixes are convenient for biscuits, cobblers, pancakes, dumplings and coffee cakes and a host of other delicious foods. I am often a bit disturbed when I open a flimsy, cardboard box of the mix and their is no liner protecting the ingredients. Making your own eliminates that plus it is so much less expensive. A purchased box of Bisquick or other similar mixes is about $4 for 40 ounces. Making your own is much, much, less expensive. For me knowing what is in the mix, where it came from, and saving money if a big deal. Try making your own. My recipe results in about 38 ounces of mix. I keep it in the refrigerator and it lasts for up to three months. Separate the mix into one-cup portions and freeze and it will last even longer. Baking Mix
4 1/2 cup all-purpose flour
1/2 cup dry milk
2 1/2 tablespoons baking powder
4 tablespoons granulated sugar
1 1/2 teaspoon salt
1/2 cup vegetable shortening
In a food process add the dry ingredients. Cut the vegetable shortening into small pieces and add to the processor. Pulse until all the shortening in incorporated. Store in a zipper bag in the refrigerator. You can also do this by hand. Add half the dry ingredients to a large bowl. With a fork or pastry blender work in the shortening until the mixture resembles course sand. Slowly mix in the remaining dry ingredients.
Baking Mix Easy Biscuits
2 cups baking mix
3/4 cup milk
Preheat your oven to 400˚. Mix ingredients with a fork until a soft dough forms. Your batter will be a bit lumpy. Knead the dough on a floured surface gently, about 10 – 12 times. Do not over-knead. Roll the dough out and cut with a f2-inch floured cutter or glass. Place on an ungreased baking sheet and bake 10 minutes.
Baking Mix Pancakes or Waffles
2-cups baking mix
1 egg
1 to 1 1/3 cup milk
Mix and you are ready for pancakes or waffles.
