Lemon-Shandy Grilled Chicken

bbq chix 400Barbeque chicken is one of my favorite grilled foods. I don’t have it often, but when I do I like to keep the skin on so it is really crispy and loaded with flavor. I don’t make it too often, as I know every time I do I eat a tad more saturated fat than I like.  However once in a while it is a great taste treat I enjoy.  I like to grill the chicken on a low flame and turn it often. I always grill chicken with a thermometer handy. Once it reads 165˚ it is ready to rest and then enjoy. Because I grill it ‘low and slow’ the meat could dry out, which is another good reason for keeping the skin on. Marinades help with moisture and I came up with a good and easy one. The next time you are at your grocery store check out the beer aisle. Find a lemon or orange flavored beer and 8 chicken thighs. I like Shock Top Lemon Shandy Beer or Leinenkugel’s Summer Shandy. I have also used an Orange Shandy that is available in late summer that is good too. Whichever you use, it makes the best marinade. If using a lemon-flavored beer add the thighs and one 12-ounce bottle of beer to a large zipper bag. Toss in a sliced lemon and ½ teaspoon of black pepper and the other spices listed below. If you are using an orange flavored beer add one sliced orange to the beer, chicken, and pepper and spices. The trick is to refrigerate your poultry and marinade at least 12 hours for the flavor to really be absorbed into the chicken. Grill the pieces on a medium-low flame until the thickest piece reaches 165˚. The last ten minutes I coat the pieces frequently with a favorite barbeque sauce and turn it often to eliminate the sauce burning. Try this out  – it is really good. I promise!

1 lemon cut in slices or an orange if using an orange flavored beer

8 chicken thighs

½ teaspoon black pepper

½ teaspoon red pepper flakes

2 garlic cloves

1-cup barbeque sauce
