Iced Coffee At Home!

cold coffeeIced coffee is a summer favorite. Many people enjoy it year round. Specialty coffee shops specialize in these but are quite expensive! Markets carry iced coffee in individual servings as well as larger size. Try making your own. Easy, so much cheaper, and easy to personalize to fit your tastes. Prefer organic? You can make sure your iced coffee is organic by making it at home. I like to make up a batch and keep in the refrigerator for a quick refreshing treat when I want it, and how I want it! Use the following recipe for one serving, but double or triple or whatever to suit your needs!

1 cup cold or room temperature coffee

1 cup of milk (I use fat free-organic milk.)

4 – 5 ice cubes

1 – 2 teaspoon raw sugar

1/4 teaspoon vanilla flavoring

1 scoop fat-free ice cream

Blend the milk, coffee and ice in your blender until there are no large chunks of ice remaining. Add sugar and your flavoring – use your favorite! . Mix again. Pour into serving cup or glass. Just prior to serving add one scoop fat-free ice cream, again choosing your favorite flavor. Whipped cream would be a good substitute for the ice cream. Garnish with a cookie stick!
