Homemade Onion Rings – A Little Indulgence Won’t Hurt!

photo-23The other day I was craving fried onion rings. Sure there are healthy versions but I wanted the real thing. I had been feeling a bit ‘fried’ so perhaps that is why I was craving fried food. Actually I was craving bar food, but that is another story. I think it is okay to indulge in favorite foods once in a bit even if they are not the best nutritional choice. Moderation is the key. These are easy and quick, and very inexpensive. I love this recipe because the result is a crunchy coated onion ring. The onion is easy to eat and the entire onion doesn’t come out with the first  bite, leaving behind a hollow tube of breading. They are just plain good. I had sliced up a few potatoes on my mandolin in 1/8 inch slices and cooked these while I got the onion rings ready. Here is what you will need:

1 large, white onion. This will be plenty of onion rings for at least 4 people!

corn oil

1 bottle Light Corona beer

Slice the onion into 1/2 inch slices. Separate the rings and allow them to air dry 30 minutes.

In a shallow dish place 1/2 cup baking mix. Dredge each onion ring in the dry mix. Next dip the same ring into 1 cup of baking mix you have mixed with enough of the beer to make a batter fried chipsabout the same consistency as ketchup, or even a bit thinner. Heat 2 – 3 inches of oil in a pan to 350˚. Fry a few rings at a time being careful that the cooking rings don’t touch each other to ensure crisp onion rings. Remove to a paper towel for a few minutes and then remove to an elevated cooling rack. Yummers!
