Bread crumbs are something I use often in cooking. I cannot tell you how many times I reach into the pantry only to find the container holding half as many crumbs as I need. Frustrating. Bread crumbs are easy to make yourself. You can use saltine crackers, townhouse crackers, fresh bread, or dry bread. I have even made bread crumbs from sandwich buns I was not using. Other crackers may work as well, just be careful if these are already flavored or seasoned. Crumbs from crackers make great breading though those can be a tad salty. Crackers crumbs are easy because you can just put them in a zipper bag and roll with a rolling pin until you achieve the desired crumb size. (Put your kids to work!) You can also put the crackers in blender or a food processor to make the crumbs. If using fresh bread you need to crumb the bread in a food processor. Dry, day-old bread will also work best in a blender or food processor.
For each 1 cup of prepared crumbs you will need:
1 tsp black pepper
1 teaspoon oregano
1 teaspoon basil
1 teaspoon onion powder
1 teaspoon garlic powder is optional
1 tablespoon cornstarch – this will help with crisping
2 teaspoons vegetable oil
Mix all the ingredients and crumbs in a covered container or bag. Add vegetable oil and mix. Store in an airtight container.
