Guacamole – Think Beyond Chips!

guacHomemade guacamole is delicious, nutritious, and easy. Hmm, I am thinking this sounds a bit familiar as I say this about so many of my recipes. True for other recipes, true for this one too. Guacamole is served with pita or tortilla chips. Well most of the time that is true. Try mixing up guacamole and filling boiled eggs for a new twist on deviled eggs. Purchase a slaw-vegetable mix at your market and use guacamole for your dressing.  This is great with any type of taco, or as a side. Basic Guacamole

2 large avocados that are just ripe

quac21 teaspoon finely minced garlic

2 tablespoon minced onion

1-tablespoon olive oil

2 tablespoons chopped, seeded, tomatoes or salsa

pinch red pepper flakes (Heat to taste.)

1-tablespoon fresh lime juice

1-tablespoon fat-free sour cream

½ teaspoon black pepper

¼ teaspoon ground cumin

½ teaspoon salt

In a bowl mix everything except the avocado. When mixed scoop out the avocado in large chunks. Stir gently to mix with the other prepared ingredients. Cover with plastic wrap pressed against the avocado and chill. Serve with chips or try Avocado  Deviled Eggs and/or Creamy Avocado Cole Slaw!

guac dev eggsAvocado Deviled Eggs: Prepare one dozen eggs as you would for traditional deviled eggs.  Reserve one yolk in separate dish. Crumble the yolk into fine pieces and add 2 teaspoon minced parsley. Fill eggs with guacamole and sprinkle with crumbled eggs yolk and parsley mixture.

Creamy Avocado Cole Slaw: Purchase a 7-½ cup bag of cole slaw mix, or chop fresh cabbage and shred carrots to equal 7 ½ cups. In a large bowl add the slaw mix. Drizzle with 1-tablespoon lime juice and 1 tablespoon olive oil. Stir well. Add the guacamole from the recipe above and stir well. This will help make the guacamole creamy. Cover and chill.
