Granola bars are healthy and good for you, but can be pricey and it seems too often the granola bars that are less expensive have a bit more sugar in them, and a bit less healthy additions, than you might like. The solution is to make them yourself. The recipe I have come up with is open to your own creativity. Add your favorite nuts, or leave them out. Peanut butter is the base, but other nut butters, like almond or sunflower, work well too. To help make these easy to form and easy to grab as you go out the door or pack in your lunch, I make them in cupcake papers. You adjust the size. I like about a healthy ¼ cup of my mixture per serving. Oh, they are so good with a cup of coffee, and work well when the ‘late-day droops’ hit you and you need a pick-me up!
2/3 cup peanut butter
¼ cup lite agave syrup, or honey
¼ cup maple syrup
¼ cup coarse ground almonds or other nuts
1/2 cup dried cranberries or other fruit
2 tablespoons wheat germ
2 tablespoons toasted flax seeds
1-teaspoon cinnamon
*Optional – ¼ teaspoon salt
Mix all the ingredients. Line a cupcake pan with 10 cupcake papers**. Divide mixture and press into each cupcake paper. There you go! You just made a great, healthy, snack!
**For small bite-sized servings use a mini muffin pan. You can also press mixture into a pan and cut to the size you like.
