It was time to make a meal and I hadn’t seen the inside of a grocery store for ages. French bread, ground beef, onions, and a few peppers were about all I had handy. With a few additions from my pantry and spice cabinet French Onion Hamburgers evolved. They are so good they will be made again and again! I can see them working great at a tailgate, on a buffet, or with a bowl of your favorite soup. Kids and teens would probably love them too!
1 14-inch loaf of French bread, cut in half lengthwise
¾ pound lean ground beef
1 large onion
1 egg
½ cup panko breadcrumbs
2 tablespoons extra virgin olive oil
Pinch baking soda
2 teaspoons prepared mustard
1 tablespoon tomato paste
½ teaspoon black pepper
½ teaspoon celery salt
¼ cup diced green pepper.
Cut your onion in half. From one half cut thin rings. Dice the other half. Heat oil in pan and add onion rings. Cook on medium heat until golden. Turn rings and sprinkle with a pinch of baking soda. This helps caramelize the onions. Once completely golden turn off heat.
In large bowl mix the beef, diced onion, pepper, panko crumbs, and egg. Add remaining mustard, tomato paste and spices and mix well. Split the French loaf lengthwise. Scoop out bread from bottom half to form small indentation. Spread meat mixture on the bread being sure to pack the meat mixture firmly. Top with the caramelized onions and drizzle any remaining oil from cooking the onions onto the onions and beef mixture. Bake in preheated 375 degree oven about 22 minutes, or until the meat is done to your liking. Remove from oven and allow to rest a few minutes before cutting into 2 inch pieces. Serve with your favorite condiments.
