Rich and delicious, this is a uniquely different recipe for pasta. I am sure there are a few of you out there who turned up your nose at the thought of smoked oysters in anything, but give it a chance. It is really amazing when it comes to rich and flavorful. Almost everyone who has tasted this is pleasantly surprised, whether or not they liked smoked oysters beforehand. Smoked oysters are in your grocery store right where you will find canned tuna. They are inexpensive, (less than $3.00 a tin) once you consider it takes one tin of smoked oyster for two very generous servings.My father-in-law loved these little tins of smoked oysters and got me to be a fan as well. In fact, our whole family loves them. I remember going grocery shopping with our daughter and oldest son when they were ‘little’ and they both loved getting a tin of smokes oysters for a treat. Forget the candy bars by the check-out isle! Anyway, give this pasta sauce a try. You may discover you like smoked oysters too. This pasta dish is inexpensive and so good. A bit rich, a bit savory, and more than a bit delicious.
6 ounces dry fettucine cooked according to package directions
1 3.75 ounce tin of smoked oysters in sunflower oil (Buy whole oysters, not pieces.)
1 medium, red, onion sliced into very thin strips
1/4 cup finely diced, celery
2 tablespoons extra virgin olive oil
2 teaspoons Italian seasoning
2 teaspoons dried parsley
1/2 teaspoon garlic powder
1/2 teaspoon celery salt
1 cup vegetable or chicken stock
1/2 cup white wine, or more stock
Parmesan cheese
Open the tin of smoked oysters and remove the oysters to a plate. In sauté pan on medium heat, add olive oil. When hot add thin slices of onion and cook until soft and slightly golden, Add diced celery and cook three minutes. Add the liquids from your tin of oysters and heat through. Stir in Italian seasoning, garlic powder, and celery salt. Add stock and white wine. Heat on medium- high heat until sauce thickens a bit. Gently stir in the smoked oysters and dried parsley. Cover and remove from heat.
Prepare pasta as directed on package. When drained, stir hot pasta into oyster sauce. Plate and garnish with Parmesan cheese.
