Muffins are so versatile. You can add any of your favorite ingredients, apple, nuts, raiseos, just about anything.
These muffins have no fruit and no nuts, but still are our favorite.
They are a treat and so perfect with a cup of hot coffee or tea. They have a wonderful flavor and texture. You really need to try them.
These muffins are easily made vegan by using ingredients marked **.
Preheat oven to 350*
Glaze
2 tbsp butter or margarine**
2 tbsp maple syrup** or honey
2 tbsp warm water
3 tbsp brown sugar
3 tbsp white sugar
Mix together and set aside. You want to prepare the glaze before you
mix the muffin batter.
Muffins
1 c flour
1 c oats (not instant)
1/4 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1/3 c brown sugar
1/4 cup maple syrup** or honey
2 tbls dark molasses (Don’t omit this!)
1/4 vegetable oil
1/2 cup water
1 egg or 3 tbsp mashed avocado**
Mix all the muffin ingredients in order given.
Do nut butter or oil muffin tin.
In each muffin section, place 1 tbsp of the prepared glaze. Brush it over the
bottom and up the sides. Prepare 8 muffin sections in you pan.
Place muffin batter in sections, filling 3/4 full.
Bake about 20 minutes. Use the center oven rack.
When baked, immediately invert the muffin pan onto a cooling rack. Wait
about 5 seconds and lift the muffin pan just 3 inches above the rack.
Muffins may drop out or you may have to gently shake the muffin pan.
Be patient, the muffins will release.
