Dill Poaching Sauce For Fish

Wild cod deserves special treatment! It is a rich, succulent fish.  All too often cod is baked or fried, both of which can be delicious.  Try poaching! You won’t dry out the fish or mask it in crumbs and oil.  Poached cod will be moist and flavorful.  The combination of the dill sauce and cod is a perfect duo.  This sauce also works well with wild haddock.

 

 

Poaching Sauce for 2, 5-oz. portions of wild cod:

 

   1/2 cup fat free chicken stock

   1 1/2 cup fat-free half & half

   3/4 teaspoon celery salt

   1/2 teaspoon black pepper

   2 1/2 teaspoon dill weed

   1/4 teaspoon fresh grated nutmeg

Combine ingredients over medium heat, stirring frequently for 3 – 5 minutes or until sauce begins to thicken slightly.  Sauce will be semi-thick.

Add 2, 5-oz. portions of wild cod.  Reduce heat to medium-low and cover for 3 minutes.  Spoon sauce in pan onto cod portions placed n the bottom of your pan consistently for 3 minutes.  Gently turn cod and spoon sauce over cod pieces for an additional 3 minutes until cod begins to loosen and seperate or until you reach desired cooking level.  Serve on warm plate with sauce drizzled on fish.  Garnish with a bit of grated lemon zest.
