Dad’s Creamy, Low-Fat Custard. So Good!

 

 

custrd doneOften men aren’t fans of dessert. I always say it is because they eat so much they have no room left for dessert! This creamy custard tastes rich and luscious. No one will want to pass it up. It is hard to believe it is low fat!

For four servings you will need:

4 cups fat-free milk

1 ¼ cup sugar

1-cup flour

4 eggs, well beaten with a whisk (Use free-range eggs as they usually have less fat in each yolk.)

3 teaspoons good quality vanilla

1 tablespoons butter

 

Heat milk slowly until the milk near the edge of pan begins to bubbles. It is best to sir frequently and heat milk slowly to avoid scorching. Once bubbles area turn heat to low. (You now have scaled milk – a common ingredient in ‘older’ recipes.)

Wish in sugar, stirring constantly. Once blended add flour, whisking constantly. Add the beaten eggs all at once and continue whisking. Mixture will thicken quickly. As soon as it begins to thicken totally remove from heat continuing to wish. Add vanilla and butter and stir gently with large spoon.

Pour into individual dishes and cover with plastic wrap. Chill thoroughly.  Prior to serving add strawberries and blueberries.
