Corn chips are a great go-to snack. They seem to go with just about anything and everything. I remember a friend who was sharing a bit of wine with me pulled out a bag of generic corn chips. She apologized saying, “I know these aren’t very good….’. What? I honestly did not know there was a corn chip that was nothing but delicious. True some are a bit more delicious than others, but I have never met a corn chip I didn’t like. I have never felt the need to improve on corn chips either, but these are dressed up a bit. The sweet and salty combination is really delicious. It is like having the dip already on the chip. I made these years ago, almost by mistake and for some reason haven’t thought about them in ages. Try them out. You had better make two batches. Share one, and hide the other for yourself! Why not? It works for me!
1 cup unsalted nuts. Almonds work great in this.
¾ cup peanut butter
½ cup honey
¼ cup brown sugar
¼ cup corn syrup
1/2 cup dried cranberries – optional
On medium heat, warm the honey, brown sugar, and corn syrup. Heat just a few minutes until warm enough to melt the peanut butter. Remove from heat and stir in the peanut butter. Spread the corn chips out on large, rimmed baking sheet lined with parchment paper. Drizzle peanut butter mixture over corn chips. Sprinkle on the almonds and stir well. Make sure after stirring that the chips are in an even layer on your pan. Sprinkle on a half-cup of cranberries if you want a ‘festive’ look! Allow to air dry for 2 hours. Break apart any chunks that are a bit too large. There you go, you just made a really irresistible corn chip snack!
