If you like to wake up your taste buds with flavor and crunch, this is for you! Cold Broccoli Salad is great made with fresh broccoli from the garden or market. Frozen just won’t do this time! Low-fat as well!
2 bunches fresh broccoli, cleaned and chopped into 1 inch pieces.
1/4 cup diced green onions, tops and all.
1/2 cup diced, fresh celery.
1/4 cup shelled, salted, sunflower seeds or other nuts. (Omit nuts if wanting less fat.)
⅓ cup golden raisins, dried cranberries, or crasins.
1 small can water chestnuts, rinsed and cut into slivers
Toss the above ingredients together in large bowl.
In small bowl, (or jar with cover for easy mixing) mix the following:
1/3 c fat-free sour cream or fat-free plain yogurt
1/4 cup fat-free mayonnaise
3 tablespoons apple cider vinegar
1 tablespoon sesame oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon dill weed
2 tablespoon sugar
Mix well and pour over salad. Toss to coat all vegetables.
Chill at least 2 hours.
Garnish with fat-free bacon bits and/or toasted pine nuts.
