Nothing rounds out a bowl of soup, a plate of pasta, or just about anything like a piece of grilled bread. Slathered (is that a word?) with butter it just has to be good. But sadly, yes you know it’s coming: not good for you. Here’s my trick for great crusty, flavorful grilled bread with very little fat and incredibily fast. I use two pieces of low calorie Italian bread. Toast it in your toaster so it is light golden in color. Now the trick! For two slices use 1 tablespoon olive oil. Using a food grade brush, brush oil on both sides of toasted bread. Place in hot non-stick pan for just a minute or two, turn bread and cook for another minute and you have great grilled bread. You don’t even have to feel guilty eating it!
