Brownie Waffles & Brandied Cherries – Perfect for Feb 14th!

brown waff readyValentine’s Day means chocolate. Oh it may mean candy hearts and roses too, but chocolate rules the day. Try Chocolate Brownie Waffles for Valentine’s Day or any day. It will definitely be a special dessert or treat whenever you make it, and it is so darn easy! For a more ‘grown-up’ version I like to add a few brandied cherries for garnish. Kids enjoy two waffles filled with ice cream for a great ice cream sandwich. My favorite is one waffle with a scoop of good ice cream, perhaps some chocolate sauce or raspberry jam, and whipped cream of course. Oh, the choices are endless!

For four waffles: 1½ cup packaged brownie mix  (A package that yields a 9 x 13  pan will yield  more than 4 waffles. If you want just a small batch, look for the small boxes of a quick mix that hold  8 ounces of mix.)

 

1 egg

2 tablespoons vegetable oil

1 tablespoons + 2 teaspoons water

Preheat your waffle maker according to directions. Mix the brownie batter with a spoon until just blended.

Spray your waffle maker completely, top and bottom.

brownie waffles dnSpread batter on waffle maker and quickly spread with a spoon to ensure an even waffle. Close and complete cooking according to directions for your waffle maker.

When waffle is done, unplug and allow to cool on the the waffle maker for 3 – 4 minutes. Gently lift waffle from pan and separate into 4 pieces.

 

Serve brownie waffle on a plate with ice cream. Cherry and strawberry ice cream work great for Valentine’s Day.  Add chocolate sauce, whipped cream, or brandied cherries. Extra waffles freeze well.

Brandied Cherries

1 cup fresh or canned, whole, sour cherries that have pits removed.

In a half-pint jar add the cherries. Sprinkle 2 teaspoons sugar over the cherries and cover the cherries with brandy, or Southern Comfort. Place lid of jar and chill at least 4 hours. These last for ages in the refrigerator.
