Tasty treats are often the highlight of a get together with friends. Oh of course the good company is note-worthy too! I always love to do a bit of grazing at the food table and try new things and old favorites. This is especially fun when everyone brings something to contribute to the food overload. When hosting a group of people in your home, or taking something to add to the buffet, whether it be snacks or a main dish, what to bring is the dilemma. What to bring that is different and won’t break the bank is difficult. Try Steak Kabobs. Steak? That is never cheap! Here is the trick. Make small steak kabobs with less expensive stew meat. It work great. My marinade makes it full of flavor and so tender no one will think they are indulging in stew meat! Beef stew meat is around $4 a pound. Try finding a pound of steak for that price! If you purchase your meat already packaged, check packages for pieces that are close to uniform in size. If you are lucky and have an actual meat market, ask for pieces about the same size. Buy inexpensive wood skewers for your kabobs. If these are for a main course use the entire 10-inch skewer. For appetizers I like to cut them in half and make smaller kabobs. Lots of people like to put vegetables on their kabobs. I never do this as vegetables and meat don’t share the same cooking times. If you are wanting vegetables with your kabobs, fill additional skewers with just vegetables. However if you really want a vegetable use whole mushrooms. They cook in about the same time as the meat and will ‘stretch’ your meat and result in more skewers. Great for the broiler or grill, these kabobs will be a hit! 1/2 cup low-sodium soy sauce
1/4 cup honey, brown sugar, or agave
1/4 cup finely minced onion
4 cloves of garlic, minced
1 teaspoon black pepper
1/4 cup ketchup
2 tablespoons prepared mustard, any type
Mix all the ingredients in zipper bag or deep dish.
Steak
1 pound of stew meat. One pound will yield 5 – 6 large skewers, or 10 – 12 small skewers.
Trim extra fat from pieces if needed. Place meat in bag or dish with the marinade. Be sure all the pieces are covered with the marinade. Chill for 4 hours, or as long as overnight. Be sure and stir a few times.
Remove meat from marinade and place on skewers. If using large skewers place 4 – 5 pieces per skewer. If you are making an appetizer use a 5-inch skewer and place 2 – 3 pieces on each skewer. If you have a few smaller pieces clump them together on your skewer to form one piece.
Spray broiler pan with cooking spray and heat broiler to high setting. Place pan 6 inches from the broiler and cook 4 minutes. Turn skewers and cook an additional 3 minutes or until you reach your desired level of cooking for the steak(.Be careful not to overcook like I did my first batch!)
Remove kabobs from the pan and cover with foil and allow to rest 3 – 5 minutes.
Discard marinade.
Dipping Sauce
1 cup sour cream or plain yogurt
1/4 cup steak sauce
2 teaspoon yellow mustard
1/2 teaspoon ground cumin
1/2 teaspoon black pepper
2 tablespoons finely chopped green onion tops
*Optional: few drops of hot sauce
Mix together and chill prior to serving.
