Apple Slaw – Forget the cabbage!
Cole Slaw is a favorite at our house. Recently my crisper housed zero cabbage, but lots of fall apples. So why not? Yep, that’s right, coleslaw without the cabbage. It is the best and may be the new ‘go-to’ slaw around here. I tried vegan mayonnaise since we have two vegans in our family, and it is really good. Any mayonnaise will work, of course. This is so good as a traditional side-dish, but would be excellent on a burger or in a fish taco. My husband tried this and said ‘It tastes like fall’. I agree.
Ingredients
1 1/2 cup cold water mixed with 2 tablespoons lemon juice. You will add apple slices to this to prevent browning and then discard.
3 Granny Smith apples, washed with peel on
1/2 cup mayonnaise
1/4 cup sugar
2 tablespoons apple juice (I keep a small jar of baby or toddler apple juice in my pantry. Perfect for
recipes when needed. You could substitute lemon or ornage juice as well.)
1 tablespoons course ground, dijon mustard
1/2 cup finely chopped carrots
1/2 cup finely chopped celery
1/2 cup coarse chopped walnuts
1 tsp black pepper
1 tsp celery salt
2 tsp ground ginger
optional: 1/2 cup dried cranberries or chopped red pepper
Slice the apple into 1/8 – 1/4 inch thick slices. I don’t remove the core, just make big, round slices.
Place each slice in the lemon water immediately.
Remove a few slices at a time and stack them together. Cut the slices into strips as wide the the
slices are thick to form shoestring style strips. I just cut around the core and discard the cores.
Place the shoestrings in the lemon water.
Mix the mayonnaise, sugar, fruit juice with the carrots and celery. Stir. Add the mustard, pepper, salt, and ginger and cranberries or pepper if using. Mix well.
Drain the shoestring apple slices. Do not rinse. Gently stir into the mayonnaise mixture. Add the walnuts.
The mixture may seem a bit dry at first. After it has chilled with amount of liquid will increase.
Cover and chill 2 or more hours.
Garnish with crispy bacon crumbles or feta cheese. Be prepared to make this again and again.
