Apple Cookies are so good. A nice soft cookie with the taste of fall.
2 tablespoons ground walnuts (1 tablespoon wheat germ may be substituted for the walnuts
1 tsp baking soda
1 cup soft butter
1 1/4 cup sugar. Divided
1/4 c brown sugar
1 egg
1/2 cup thick applesauce
1/2 cup grated, fresh apple
1/2 tsp cinnamon
Mike together using 1 cup of the sugar, adding sauce and apples last. Dough will be quite moist. Cover and chill at least 2 hours. Shape into 1- inch balls and roll each ball of dough in remaining sugar with a bit of cinnamon mixed in. Bake 10-12 minutes at 350*. Cookies will be lightly brown.
Apple Icing
3/4 powdered sugar
2 tablespoons apple juice
Add the apple juice a bit at a time until you achieve an icing that is just thin enough to drop off a spoon.
Drizzle in irregular lines. Allow ticing to set.
*If you don’t have wheat germ, substitute with whole wheat flour, ground oats or ground nuts
