Fried Green Tomatoes

Every summer I wait for the very first ripe tomato, after craving them for weeks. I watch the plants and hover for that first bite. The first ruby jewel never makes it into the house, I indulge right in the garden. Soon things change and I feel I have tomatoes coming out of my ears. I add them to a variety of dishes, I preserve them, I get creative with them, and I share. I get tired of tomatoes. Fried-Green Tomatoes are a refreshing and tasty change. These are delicious as a side to any meal. Slice them thick and they are so good on a bun and eaten as a sandwich. I cut them up and add all the taco fixings I like, roll in a soft tortilla and enjoy a meatless burrito. Anyway you enjoy them, they are just so plain good.

Ingredients

3 – 4 firm green tomatoes, with peel
1 cup seasoned cracker or bread crumbs*IMG-5663
1 cup all-purpose flour
2 large eggs, well beaten
½ cup peanut or vegetable oil

Heat the oil in a large fry pan on medium-high heat. Heat your oven to 300*.
Cut the tomatoes into ½ inch slices.
Dredge each slice in the flour. Dip the floured slice in the beaten egg and cover with bread crumbs. Pack them on with your hand. Carefully place in the hot oil and cook until golden, about 2-3 minutes. Turn and brown the other side. Place on a rack and keep warm in a 300* oven until all slices are cooked.

These I found are very good served with tartar sauce or a sweet chili sauce.
