This is a handy recipe to have. The Beefy-Broccoli Bake is a great supper or lunch. You can get it all ready in the morning and pop it in the oven at night when you come home. This even works to make and then pack up for healthy lunches. I have taken this to a pot luck and it went over really well. Dish up a serving of the Beefy-Broccoli Bake and add a bowl of soup or salad and you have a delicious meal. Whenever you make it, it will be good. Simple, tasty, and filling, it is a standard, ‘g0-to’ recipe. Substitute fat-free or low-fat cheese and reduce your sodium. Purchase a low-fat, complete baking mix and save saturated fat as well. Beefy-Broccoli Bake is a complete, nutritious meal every time you serve it.
2 cups frozen broccoli, thawed, or 2 cups fresh broccoli cooked
1 pound lean ground beef – Venison works here too!
1 cup chopped, fresh, mushrooms
2 cup-grated cheese* Use cheddar, pepperjack, or some of each.
1/3 cup diced onion
2 cups low-fat baking mix
1/2 cup cold water
1/4 cup Parmesan cheese
1/2 teaspoon salt
1 teaspoon black pepper
1 teaspoon ground mustard
1/2 cup fat-free milk
3 whole eggs and 1 egg white, or 4 whole eggs
Butter a 9 x 13 baking pan. Preheat oven to 400 degrees.
Roughly chop the cooked, or thawed broccoli and place on towel to absorb extra moisture.
Brown the ground beef and onion. Add a tablespoon or two of vegetable oil if needed. Once onions become soft add the mushrooms and cook 3 minutes. Remove from heat. Drain off any excess fat from the meat. Stir in the spices. Set aside.
In bowl add baking mix, 1 cup grated cheese, and water. Stir with fork until just moist. Do not over-stir. Spread mixture into bottom of your baking pan. Spread beef mixture over prepared crust. Sprinkle 1 cup additional cheese over meat. Next place the broccoli over the meat mixture. In small bowl whisk the eggs, 1/2 cup milk, and 1/4 cup Parmesan cheese. Pour evenly over broccoli.
Bake at 400 degree for 25 minutes. Allow to cool a few minutes prior to cutting.
*To keep this dish lower in fat, use lite cheese, or part fat-free cheese, and lite baking mix.
