Thinking ahead to my dinner I was hosting I had everything set except what to make for a salad. I didn’t want to have a big green salad mostly because I didn’t want to fuss with salad plates. I have done my cole slaw so often it has become a standard so enough of that. My entre of mashed potatoes and beef stroganoff needed a cool element, so what to make? Russians not only like stroganoff, but they love vodka. I remember going to an authentic Russian restaurant in St. Paul several years ago and asking the server what wines they had. “Vodka.” That was the response. My husband asked about local beers. “Vodka.” Same response again! We got the hint! Anyway Vodka Pea Salad is cool, colorful, and packed with flavor, and yes, does have vodka!.
1 16-ounce bag of frozen peas
¼ cup finely shredded cheddar cheese
2 minced green onions – tops and all
*2 tablespoons vodka
2 tablespoons bacon bits
1/3 cup mayonnaise – fat free of course
½ teaspoon black pepper
¼ teaspoon salt
*If you don’t want vodka in your pea salad substitute lemon juice.
Bring 6 cups of water to a boil. Remove from heat and toss in the frozen peas. Drain well. In large bowl add peas and vodka. Stir well. Add remaining ingredients. Cover and chill at least 2 hours prior to serving. Serve cold.
