So often dips, salad dressings, and even sauces are fat-filled. As try as you might to concoct these with no fat often the end result is not as flavorful as you would like. Cool Creamy Cucumber Dip is filled with flavor and you won’t miss the fat. This is very similar to the classic Bangladeshi and Indian condiment called Raita but contains no yogurt. Good as a dip for veggies, great on salads as a dressing, it is even good drizzled on rice dishes. Try it! It is refreshing and delicious!
½ cup peeled, grated, cucumber with no seeds
¾ teaspoon dill weed
3 tablespoons fat-free sour cream
¾ teaspoon sugar
Grate the cucumber and allow it to set on a paper towel about 5 minutes. In a bowl combine the sour cream, sugar, and spices. Mix well and add grated cucumber. Cover with plastic wrap and allow to chill prior to serving.
