While cherry tomatoes are in season bake them in a strata. Stratas are easy, nutritious, and delicious. A strata is a layered casserole type dish often served for breakfast or brunch. A strata typically has eggs, bread, and cheese. My Cherry Tomato Strata is rich and savory. You can lower the fat content by substituting fat-free cheese. Cherry Tomato Strata is low-carb, and low-sodium. Try it out, it is really good!
24 cherry tomatoes cut in half
3 slices multi-grain, or whole wheat bread
2 cups chopped kale, packed tightly
1 medium onion
2 cloves garlic
3 tablespoon olive oil, separated
2 tablespoons vegetable stock or water
½ teaspoon celery salt
¼ teaspoon red pepper flakes
2 teaspoon dried basil
1-teaspoon oregano
¼ teaspoon nutmeg
1 teaspoon Greek seasoning
4 – 5 large eggs (Five eggs will make your strata a bit thicker.)
½ cup mozzarella cheese
2 tablespoons Parmesan cheese
2 tables seasoned panko breadcrumbs
Preheat oven to 375 degrees. Oil or spray a 8-inch spring form pan. Halve the cherry tomatoes and place cut side down on paper towel while preparing remainder of strata. Lightly toast the three slices of bread. Cut into cubes and toss with 1-tablespoon olive oil. Spread in bottom of pan. In sauté pan heat 2 tablespoons olive oil. When hot add onion slices and cook about 4 minutes on medium heat until soft and golden brown. Add diced garlic and cook a few minutes until soft. Add kale and stir. Add spices. Add two tablespoons vegetable stock, cover and cook until tender and wilted. Remove pan from heat and allow to cool a few minutes. Once cooled layer kale over the bread cubes. In bowl wisk eggs until smooth. Stir in feta and mozzarella cheese. Add cherry tomatoes and blend well, but gently. Pour over kale in pan. Mix breadcrumbs and Parmesan cheese to sprinkle over strata. Bake 18 – 20 minutes until eggs are set. If additional browning is needed place under broiler for 2 minutes. Allow to cool 5 minutes. Serve warm or room temperature. A fresh salsa, a drizzle of olive oil, or marinara sauce is a delicious garnish for the strata.
