Clam & Shrimp Squares
This makes a wonderful lunch or brunch dish. Excellent on a buffet!
3 cups cooked brown rice. A mix of brown & wild rice would be great!
3 green onions chopped, tops and all.
1/4 cup chopped fresh parsley
4 ounces of chopped, canned, mild, green chilies
1 cup grated coolly cheese
1 teaspoon celery salt
1 teaspoon worcestershire sauce
4 egg whites, beaten until just foamy
2 cups fat free milk
1 cup chopped, boiled, shrimp. Fresh is best, but canned, drained & patted dry, not rinsed
would work as well.
1 can, 6 – 8 oz. minted clams, drained, not rinsed.
Mix all ingredients and spread in lightly oiled 13x9x2 baking pan. A smaller pan may be used for thicker, but fewer, servings. Baking time would need to be adjusted. Do not press minture too firmly in your baking dish. Bake in 325 degree, preheated oven, uncovered about 35 minutes or until knife inserted in center comes out clean. Allow to cool a few minutes until pieces can be removed from the pan easily. Serve with dill or cocktail sauce.
