My Grandma could make cookies like no other! My mother, my sisters, myself, and my daughter all love this cookie. I have tweaked the recipe a bit, well, more than just a bit, to make it healthier. Afterall, no one should be ingesting anything that has as the first ingredient, two cups of melted lard! Try the recipe, and visit the blog entitled: Clara’s cookies: Generation After Generation!
1 ½ cup lite margarine, melted
3 eggs
1 cup white sugar
1-cup brown sugar
1-teaspoon vanilla extract
1-teaspoon cinnamon
1-teaspoon baking soda dissolved in 1-tablespoon water
2-tablespoons ground flax seeds
2 tablespoon milled chia seeds
3/4 cup soy flour
4 – 41/2 cup all purpose flour
1 cup dried fruit bits, chopped chocolate chips, or nuts
Melt margarine. Cool to room temperature. Add sugars, vanilla, cinnamon and mix to blend. Add eggs, one at a time blending each egg into mixture. Add baking soda in water. Add flax seeds and chia seeds. Blend in soy four. Mix in white four. Mixture will become more and more stiff. Batter should be very stiff, not drip off of spoon. Add one cup of fruit, nuts, or chocolate. At this point you can divide dough in half and add ½ cup of nuts, fruit, or chocolate to each half. Mix in well.
Place cookie dough on large sheet of plastic wrap. From into rough log shape. Roll in plastic wrap to smooth log and make it uniform. Place on baking tray to help log keep its shape. Freeze 8 hours, or up to two weeks. When ready to bake heat oven to 375 degrees. Line baking sheets with parchment paper. Slice frozen dough 1/8 inch thick. Bake 10 minutes until lightly browned. Remove to cooling rack. Cookies will crisp as they cool.
My family loves this cookie with walnuts, and with dried cranberries. Chopped chocolate chips are also a hit.
