Wild cod deserves special treatment! It is a rich, succulent fish. All too often cod is baked or fried, both of which can be delicious. Try poaching! You won’t dry out the fish or mask it in crumbs and oil. Poached cod will be moist and flavorful. The combination of the dill sauce and cod is a perfect duo. This sauce also works well with wild haddock.
