Most gardeners usually have an abundance of tomatoes which almost always bear to the point of excess (lucky friends!). There are also a zillion tomato lovers out there who purchase their tomatoes at a farmers market, or their grocery store. No matter where you land your tomatoes, fresh, uncooked salsa is a favorite use for good tomatoes. Fresh salsa can be runny and watery. You have probably had fresh salsa that had tomato chunks swimming in juice. The longer fresh salsa waits to be eaten, the more watery it gets. Here is the secret. Dice your tomatoes into small pieces. Place them in a sieve or strainer of some type and stir in just a pinch of salt – a true pinch. Place your strainer over a dish and stir a few times. Before you know it, in about 30 minutes, the bottom of your bowl will be filled with tomatoe juice. This is perfect to drink, add to a stock, or freeze for later use. Continue to mix up your favorite salsa with your drained tomatoes. It will be thicker with a richer tomato taste. Best of all, your chips of choice won’t drown in juice, nor will it drip all over your nice clean shirt!
